Apple Crisp

INGREDIENTS FOR THE BASE:

1/4 cup butter, thinly sliced, divided

1 juice of lemon (seeded, juiced)

6 cups Granny Smith apples (cored, cut in inch wedges, option to peal slightly but leave some skin on too for nutrients)

1/4 cup raw honey

1/4 cup granulated raw sugar or coconut sugar

2 teaspoons cinnamon

¼ teaspoon nutmeg

1/6 teaspoon sea salt

1/4 cup gluten-free flour mix

 

 

TOPPING:

1 cup gluten-free rolled oats

¼ cup gluten-free flour mix

½ cup real butter (softened) or coconut oil

½ cup raw sugar

1 teaspoon cinnamon


INSTRUCTIONS:

Heat oven to 375F. Grease a baking dish with half the butter slices and set aside. Reserve the remaining butter slices.

Place lemon juice in a large bowl along with the apples, honey, sugar, cinnamon, nutmeg, sea salt and gluten-free flour mix in a large bowl. Toss well to coat and transfer to the prepared baking dish.

Arrange the rest of butter slices over top of the apples.

Prepare the crumble topping . In another large bowl combine oats, gluten-free flour, ½ cup real butter (softened) or coconut oil, sugar, and cinnamon. Using a wooden spoon mix until a loose crumbly mass forms about 8-9 turns with a spoon (mixture will be chunky). Sprinkle over the apples in the dish and bake for about 40-50 minutes, is bubbling and golden brown. Cool slightly before serving and enjoy. 

Transfer left-overs to a glass storage container and refrigerate up to 5 days.
