Lemon Baked Herb Halibut or Mahi Mahi

INGREDIENTS

  • 1 ½ pounds fresh fish fillets (4 fillets, about 1 inch thick)
  • Himalayan Sea Salt
  • Black peppercorns
  • ¼ cup Extra Virgin Olive Oil, divided in half
  • 2 lemons
  • 2 tablespoons minced garlic
  • 2 2 tablespoons finely chopped fresh rosemary
  • ¼ cup fresh parsley, chopped

INSTRUCTIONS

Preheat oven to 350 degrees F.

Pat fish dry with a paper towel and generously season all over with salt and pepper. Pour 2 tablespoon olive oil in baking dish large enough to fit the fillets in one layer.

Thinly slice 1½ lemons, remove any seeds, and set aside the remaining half. Place the lemon slices in the dish, overlapping slightly if needed, and top with garlic and rosemary herb. Lay the fillets in the dish, drizzle with remaining olive oil, and bake until the fish flakes easily with a fork, 15 to 20 minutes. Do not over bake.

Remove from the oven, place on platter, sprinkle with chopped parsley, squeeze remaining lemon half over the top, and serve.
